Can someone answer this very tough question?

1. Why a 0.1 kg aluminum pan cools faster than 0.1 kg of cooked apples when both are removed from the same oven at the same time?

2. Two common refrigerants are freon and ammonia. Water has a higher specific heat capacity than either of these materials. Why, then, is water not used as a refrigerant?
