Frozen Chocolate Mint Squares
I love anything, be it candy or dessert with mint in it. Add chocolate and my taste buds think that they are in heaven. These delicious chocolaty mint squares are even better because they are frozen. It’s like eating chocolate mint ice cream only much, much better!
Here are the simple instructions on how to make these yummy bars. First, you will need to measure out all of your ingredients. Here is a list of all the ingredients you will need to make your frozen chocolate mint squares:
1 package of fudge brownie mix (the nine by thirteen inch size)
2 egg whites
¼ cup of unsweetened apple sauce
2 teaspoons of vanilla extract
½ cup of baking cocoa
1 ½ cups of milk
2 sixteen ounce packages of large marshmallows
½ teaspoons of mint extract
1 sixteen ounce container of whipped topping
2/3 cup of Oreos or any cream filled chocolate cookie crumbs
Begin by crushing your Oreos in a plastic bag. I use a rolling pin to do this. Set the cookie crumbs aside and then separate your eggs, leaving only the egg whites.
Then, in a large mixing bowl, combine your brownie mix, egg whites, applesauce, and vanilla. Mix with the electric mixer until well blended. When well blended, spread the batter into a well greased nine by thirteen inch pan. Bake it at 350 degrees for eighteen to twenty two minutes, or until a toothpick comes out clean. Once baked, cool your chocolate bars on a wire cooling rack.
In a Dutch oven combine your cocoa and your milk. Cook the chocolate and milk and stir over medium heat until the cocoa is dissolved. Once the cocoa is dissolved stir in your marshmallows. Stir until the marshmallows are all melted.
Remove the chocolate mixture from heat and stir in your mint extract. Set it aside and let cool completely. You can stick in the refrigerator or freezer to cool faster. When cool, fold the whipped topping into the chocolate mixture. Spread the mixture evenly over the brownies. Finally, sprinkle the cookie crumbs over the tops.
Cover the brownies and freeze for at least eight hours. Remove from the freezer for at least ten minutes before serving. Cut in squares and serve!
